Let me start by saying these are not my recipes, but ones that I have tried and find myself repeating so I wanted to share. Mike has some food sensitivities, so we tend to stay away from dairy, gluten, eggs, almonds, wheat and cane sugar and really try to make vegan recipes as much as possible. Therefore, I might have adjusted some of these recipes to fit our needs! I hope you enjoy as much as we have!!
Mike grew up having Pozole for certain holidays and I knew I would never be able to recreate the way his mom does it. So, I went on the hunt to find my own recipe so he couldn't compare (lol). I found this crockpot pozole using a verde sauce and we all fell in love with it! Plus, I found organic hominy and am able to say this whole dish is made with fresh, organic ingredients. These are so good and easy to make them vegan. I use Forager's Organic Cashewgurt in place of sour cream and throw on top some vegan cheese. I also use Siete Cassava Four tortillas. Click here to be linked to the recipe.
This dinner is a staple in our household because it's so easy to make and delicious!!! I make this dish vegan by using a vegan mayonnaise and vegan parmesan cheese. This is a Pinch of Yum recipe and can be found here. If you love caesar salad, this is a MUST!
The best chili I think I have ever had! Mike was upset at first when he learned that I made chili without meat until he tried it. We both agreed how much flavor this chili had that he didn't even miss the meat. I made this without the vinegar and cilantro and used water vs broth and let me tell you it wasn't missed. I topped this with avocado and tortilla chips and my mouth is still watering thinking about it. A must try! Click here for the recipe.
I will start by saying that my picture looks nothing like theirs, but I think that might be because I used the Ninja vs the Vitamix and it turned out a different consistency. Also, I replaced the eggs with flax seed to make them vegan. And again, don't judge a book by its cover as these are very tasty! This is a great alternative to making lasagna. You literally layer all the ingredients in the crock pot and walk way while it does its thing! I make this vegan and gluten-free by replacing the cheese with vegan cheese and using gluten-free noodles. It's an easy, hearty crowd-pleaser! Click here for the recipe.
Maeve and I are obsessed with Urban Remedy's raw steel cut oatmeal. However, buying them already made gets very expensive. I finally decided to look up their recipe and make them for the first time at home. Now I am kicking myself that I didn't do this sooner! This is insanely easy and so good!
